Kale Salad Vinaigrette

This kale salad is fresh, healthy, and easy to make. Tossed with a simple lemon vinaigrette made with olive oil, mustard, and garlic, it’s the perfect side dish or light meal. Delicious on its own or topped with your favorite add-ins.

Ingredients

  • 2 bunches kale, de-stemmed and chopped

  • 4 tbsps fresh lemon juice, divided

  • 4 tbsp. extra virgin olive oilL

  • 1 tbsp. mustard

  • ½ clove garlic minced

  • Salt

  • Black pepper

 

Steps

  1. In a large bowl, massage kale for at least 5 minutes with 1 tbsp fresh lemon juice

  2. Whisk together the salad dressing by combining remaining lemon with olive oil,

    mustard, garlic, salt, and pepper

  3. Add salad dressing to the bottom of a large salad bowl

  4. Add kale on top (refrigerate if you are not ready to serve and don't toss)

  5. When ready to serve, toss the kale with dressing
