Baked Cod w/Garlic Panko Crumbs

Ingredients

  • Extra virgin olive oil

  • 4 center cut boneless, skinless cod fillets

  • Salt and freshly ground black pepper

  • ½ cup of Ritz crackers and ½ cup of panko

  • 2 tablespoons of minced fresh parsley

  • 2 teaspoons of minced garlic cloves (2 cloves)

  • 1 teaspoon of grated lemon zest

  • 3 tablespoons of unsalted butter, melted

  • ¼ cup of dry white wine such as Pinot Grigio

  • 2 tablespoons of freshly squeezed lemon juice

  • Lemon wedges for serving

 
  1. Steps

  2. Preheat oven to 400 degrees

  3. Pour 2 tablespoons of olive oil in a 9x9 inch baking dish

  4. Place the fish fillets in the dish and turn to coat both sides with oil

  5. Sprinkle the fish with salt and pepper and bake for 10 minutes

  6. In a food processor add the Ritz crackers until finely ground

  7. Combine cracker crumbs, panko, parsley, garlic, lemon zest and 1 teaspoon of salt

  8. Add the melted butter to the crumb mixture and set aside

  9. Remove the fish from the oven and pour the wine and lemon juice directly on the fillets

  10. Pat the crumbs evenly onto the fillets, pressing gently to help them adhere

  11. Return the pan to the oven for 12 minutes until the fish is cooked through the center

  12. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
