2 pounds of baby red potatoes, cut in half
1 cup of grated parmesan cheese
½ cup of extra virgin olive oil
salt and pepper to taste
Steps
Heat oven to 400 F
In a large roasting pan, toss together the potatoes Parmesan, oil and salt and pepper.
Roast stirring once until golden brown and crisp, 45 to 50 minutes
