Heavenly Vegetable Bake

Ingredients

  • Olive oil

  • 2 large yellow onions, cut in half and sliced

  • 2 garlic cloves minced

  • 12 small round potatoes, unpeeled

  • 2 zucchinis

  • 6 medium tomatoes

  • 2 yellow squashes

  • 1 teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • 2 ounces of Gruyere cheese grated

 

Steps

  1. Preheat oven to 375 degrees

  2. Brush a 9x13x2 in baking dish with olive oil

  3. Cook the onions over medium low heat for 8 to 10 minutes, until translucent

  4. Add garlic to the onions and cook for another minute

  5. Slice the potatoes, zucchinis, squashes, tomatoes to ¼-inch-thick slices

  6. Spread the onion and garlic mixture on the bottom of the baking dish

  7. Layer the potatoes, zucchinis, squashes, tomatoes alternately in the dish on top of the onions

  8. Fit the vegetables tightly, making only one layer

  9. Sprinkle with salt, pepper and drizzle with one more tablespoon of olive oil

  10. Cover the dish with aluminum foil and bake for 35 to 40 minutes until potatoes are tender

  11. Uncover and sprinkle the cheese on top, bake for another 15 minutes or until browned

  12. Serve warm
