Vichyssoise Soup

Ingredients

  • 4-5 Russet potatoes

  • 3-4 leeks white and light green parts only

  • (If leeks are not available use 3 medium white onions)

  • 4 cups of chicken or vegetable stock

  • 1 cup of heavy cream

  • Salt and pepper to taste

  • Olive oil

  • Small amount of butter

  • Chives for garnish (optional)

 

Steps

  1. Slice and cut leeks lengthwise and rinse thoroughly to remove dirt or cut and slice medium white onions if leeks not available

  2. Peel and dice potatoes.

  3. In a medium pot place olive oil and butter and melt.

  4. Add leeks or onions and sauté until softened not browned.

  5. In a stock pot add the potatoes and pour in the stock until covered.

  6. Boil until potatoes are tender.

  7. When cooked drain and add potatoes.

  8. With the blender, add potatoes and the leeks or onion and puree until smooth.

  9. Add the cream and blend.

  10. Place the soup mixer in the refrigerator until chilled.

  11. Serve chilled with the chive garnish and enjoy
