Perfect Roasted Chicken

Ingredients

  • 5 to 6-Pound roasting chicken

  • Salt and Pepper

  • 1 lemon, halved

  • 1 head of garlic, halved

  • 2 TPS of butter melted

  • 2 onions cut in quarters

  • 1 cup of chicken stock

  • 8 whole red potatoes halved

  • 4 carrots cut into quarters

 

Steps

  1. Preheat oven to 375

  2. Remove giblets from the cavity

  3. Rinse chicken inside and out

  4. Place chicken in a roasting pan

  5. Salt and pepper inside the chicken

  6. Stuff the cavity with the lemon, garlic and onion

  7. Brush the outside of the chicken with butter

  8. Sprinkle again with salt and pepper

  9. Tie the legs together with kitchen string

  10. Tuck the wing tips under the body of the chicken

  11. Cut red potatoes, carrots, and onions

  12. Place the chicken on top of the red potatoes, carrots, and onions

  13. Roast for 1 ½ hours or until the juices run clear

  14. Remove from oven and cover with foil for 10 to 20 minutes
