Cornish Hens

Ingredients

  • 4 Cornish Hens (1 to 1½ lbs each)

  • 2 tsp of salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp of onion powder

  • 4 tbsps of melted butter

  • 2 tbsps of extra virgin olive oil

  • 2 whole garlic cloves

  • 1 white onion cut in quarters

  • 4 celery sticks

 

Steps

  1. Preheat oven to 400 degrees

  2. Line baking sheet with parchment paper or foil

  3. Mix together the spices

  4. Rub the game hens with melted butter and extra virgin olive oil

  5. Place a quarter of onion in each cavity of the hens

  6. Place one whole garlic in each cavity of the hens

  7. Place half of each celery stick in each cavity of the hens

  8. Sprinkle the hens with the spices

  9. Place the hens on the baking sheet, breast side up

  10. Place hens in the oven and bake for at least one hour
